WHAT YOU WILL NEED:
2-1/2 cups boiling water
2 pkg. (4-serving size each) cherry flavor gelatin
2-3/4 cups cold water
1 can (11 oz. or 15 oz.) DOLE Mandarin Oranges, drained
4 oz. (1/2 of 8-oz. pkg.) cream cheese, softened
2 tablespoons sugar
1 tub (8 oz.) frozen non-dairy whipped topping, thawed
HERE'S HOW:
- Stir boiling water into gelatin in medium bowl stirring at least 2 minutes until completely dissolved. Stir in cold water. Refrigerate about 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites). Reserve a few mandarin oranges, for garnish. Gently stir in remaining mandarin oranges into gelatin; set aside.
- Beat cream cheese and sugar in separate bowl with wire whisk until well blended. Gently stir in whipped topping. Spoon into large serving bowl; cover with gelatin mixture.
- Refrigerate 2 hours or until firm. Garnish with reserved mandarin oranges.
