WHAT YOU WILL NEED:
6 cups fat-free chicken broth
2 skinless boneless chicken breasts, cut into 1-inch cubes
1 tablespoon fresh ginger, grated
2 cups sliced celery
2 red or green bell peppers, cut into 1-inch cubes
4 oz. white mushrooms, quartered
1 bunch green onions, sliced
1/2 cup chopped cilantro
1/4 cup fresh lime juice
2 tablespoons chili sauce or other hot sauce
HERE'S HOW:

HERE'S HOW:
- Cook broth over medium heat, in large pot, to boiling.
- Reduce heat; add chicken and ginger. Simmer; covered 5 minutes.
- Stir in celery, bell pepper, mushrooms and green onions; simmer 3 minutes more or until vegetables are tender.
- Remove from heat. Stir in cilantro, lime juice and chili sauce.
Nutrition Goal: low saturated fat; rich in potassium and Vitamin A & C.
